We use nutrient- rich and flavourful,  regeneratively grown grains from Wild-farmed, a uk company committed to sustainable agriculture. After fermenting in the fridge for 36 hours, the dough is rolled out and rested at room temperature for 4 hours, ready for service.

the secret ingredient to almost all of OUR FLATBREADS IS OUR FONDUTA - A richer, thicker version of béchamel. To enhance its depth of flavor, we ADD Graviera cheese, a Greek cheese known for its nutty, slightly sweet taste. Kept chilled, this creamy mixture spreads smoothly onto the dough, while adding a luscious, velvety texture.
